Lemon dessert
Lemon dessert in glass was made in summertime and it is fresh and light dessert. I put it in glass because it looks elegante and it is easy to make. Hope you enjoy the recipe!
MERINGUE
-2 beljaka
-3 žlice stevie za peko ali 1 žlica sladkorja
-vaniljin ekstrakt
Beljake sobne temperature stepamo pri najvišji hitrosti. Ko je sneg beljakov že precej gost mu počasi dodajamo stevio ali sladkor. Maso stepamo približno 5 minut, nato dodamo par kapljic vanilje. Na pekač prekrit s peki papirjem razporedimo meringue maso, približno debeline 3 cm.
Pekač postavimo v pečico, ki smo jo ogreli na 180°C. Takoj, ko v pečico postavimo pekač, temperaturo znižamo na 150°C. Meringue pečemo 35 minut, nato rahlo odpremo pečico ter pustimo, da se meringue v pečici popolnoma ohladijo. SADNI PIRE/GOZDNI SADEŽI
-450g zamrznjenih gozdnih sadežev
-2 žlici želirnega sladkorja sladkanega s stevio
Na zmernem ognju kuhamo zamrznjeno sadje približno 10 minut. Ko je sadje dobro zmehčano, ga prestavimo v mikser za sadje in miksamo, dokler ne dobimo gladke mase. Maso nato prelijemo skozi cedilo nazaj v kozico. Tako de znebimo vseh grudic. Masi nato dodamo želirni sladkor in kuhamo še dobrih 5 minut. Večina tekočine je izhlapela, zato smo dobili gosto maso podobno marmeladi.
LIMONIN NAMAZ
-2 rumenjaka
-1 jajce
-lupinica 1 limone
-sok 3 limon
-3 merice stevie ali žlico sladkorja
-2 žlički gustina
-50 g masla
Vse sestavine, razen masla postavimo v kozico. Na zmernem ognju kuhamo maso dokler se ta ne prične gostiti. Za mešanje uporabljamo leseno kuhalnico. Ko je masa dovolj gosta kozico odstavimo z ognja in ji počasi primešamo maslo. Mešamo dokler se maslo ne raztopi, nato namaz prelijemo v kozarec za vlaganje, počakamo da se ohladi. Namaz lahko v hladilniku hranimo približno en teden.
Kozarec začnemo sestavljati z meringue biskvitom. Tega nadrobimo na poljubne koščke in prestavimo v kozarec. Nato čez meringue prelijemo dve žlički sadnega pireja in kozarec rahlo potolčemo po dnu, tako da pire steče med meringue. V kozarec nato nabrizgamo limonin namaz debeline 1 cm. Dekoriramo s svežimi gozdnimi sadeži.
MERINGUE
-2 egg whites
-1tsp stevia or 1 tbsp sugar
-vanilla extract
Room temperature egg whites need to be beaten on a high speed. When they firm up a bit you need to add sugar or stevia. Beat the mixture for about 5 minutes and then add vanilla. Place meringue on a baking pan covered with baking paper. Bake them for 35 minutes in preheated oven on 180°C, which you have lower on 150°C when you put meringe in. After 35 minutes open the oven and let cool completely in the oven.
FRUIT PUREE
-450g frozen mixed berries
-2 tbsp gelatin sugar
On a medium heat you cook berries for about 10 minutes. When the berries are cooked you need to mix then in a blender. Then pour them over a sift to get a smooth puree. Pour the puree back in the pan and add gelatin sugar. Cook for another 5 minutes to get thick puree.
LEMON CURD
-2 egg yolks
-1 egg
-lemon zest for 1 lemon
-lemon juice from 3 lemons
-1/2 tsp stevia or 2 tsp sugar
-2 tsp corn starch
-50 g butter
Mix all the ingredients but butter in a cooking pan. On a medium heat cook the mixture until it starts to thicken. We must stir with a wooden spoon. When the mixture is thick enough we move the pan from the heat and add butter.
In a glass you first put chopped meringues. Then put in 2 tsp of berries puree. Shake the glass so the puree will pour between the meringues. Then put in lemon curd and decorate with fresh berries.
