Banana bread with sour cherries

Here is the recipe for banana bread with sour cherries. It is super easy and quick. You don't need a mixer for this recipe. It is the recipe that I presented on television show called Dobro jutro.

-120g butter

-200g sugar

-2 eggs

-1/2 cup sour cream

-3 bananas

-180g flour

-1 tsp baking soda

-1/2 cup chopped almonds

-1 cup sour cherry

Bananas for banana bread must be very ripe. If they are not ripe enough you can cook them in the microwave for 5 minutes, or bake them at 150°C for one hour. If bananas will have a lot of liquid, make sure to cook that until it thickens, because nobody likes rubbery banana bread. Mix liquid with bananas and some vanilla and mash everything together.

In a bigger bowl, mix together soft butter and sugar. You don't have to beat it too much. Then add 2 eggs and mix until incorporated. Add in bananas and almonds and mix again. Then sift in flour and baking soda and slowly combine everything together. Lastly add in sour cherries and fold them in the mixture. Make sure not to over mix or the banana bread won't be nice and soft.

Transfer the mixture into greased bread loaf pan and sprinkle with some almonds. Bake at 170°C for 1 hour or more. Check the bread after 1 hour using a wooden stick. Stick it in the middle of loaf. If the stick comes out clean, banana bread is done.

-200g sladkorja

-2 jajci

-pol skodelice kisle smetane

-3 banane

-180g moke

-žličko sode bikarbone

-pest mandljev

-skodelico višenj

Banane za pripravo bananinega kruha morajo biti zelo zrele. Pred uporabo jih za en večer postavimo v zamrzovalnik, ali pa jih 5 minut segrevamo v mikrovalovni pečici. Ta korak je pomemben zato, ker banane pri toplotni obdelavi izločijo vodo. Banane nato odcedimo. Tekočino, ki smo jo dobili od banan na zmernem ognju kuhamo dokler ne dobimo goste, dobro koncentrirane mase. Vse skupaj zmešamo in dobro zmečkamo. Po želji lahko dodamo malo vaniljevega ekstrakta.

V večji posodi penasto vmešamo maslo sobne temperature ter sladkor. Nato dodamo jajca in dobro premešamo. Dodamo bananin pire, nato še nasekljane mandlje.

V posodo nato presejemo moko in sodo bikarbono ter na rahlo premešamo. Dodamo še višnje in jih počasi vmešamo v maso. Ključno pri bananinem kruhu je to, da se mase ne meša preveč. Lahko ostane kakšen delček, ki no dobro premešan. Če bomo maso preveč mešali, bo bananin kruh gumijast. Maso nato prelijemo v namaščen pekač za kruh ter postavimo v ogreto pečico. Pečemo pri 170°C,1 uro, lahko tudi malo več. Odvisno je od vaše pečice. Če je kruh narejen preverimo tako, da zobotrebec zabodemo v sredino kruha. Če je zobotrebec čist, je kruh pečen.
