Red Velvet
I've been doing some mix up with my favorite cupcakes, and this is the recipe that I came up with. Delicious red velvet cupcakes!
Recipe: yields: 24
-100g butter
-50g oil
-2tbsp cocoa powder
-2 tsp vanilla extract
-200g granulated sugar
-3 eggs
-300g flour
-1/2 cup milk
-red food coloring
-1tbsp mascarpone
-salt
-tsp vinegar
-tsp baking soda
Mix together butter, which is on room temperature, oil and sugar. Keep mixing until light and fluffy. Add one egg at a time and mix well. In second bowl sift together flour and pinch of salt. You also need to prepare your wet ingredients, which are milk combined with cocoa powder and some red food coloring. Use as much color as you wish, depending on the color you wish your cupcakes to be. I've been using gel food coloring and I added a bit more than 2 tsp. Stir the ingredients together so there will be no lumps from the cocoa powder. Then you add everything into the first bowl, alternating between wet and dry ingredients. After everything is well stirred together add in mascarpone cheese and mix. Lastly you need to add mixture of baking soda and vinegar. Mix those two together so it foams and add into cupcakes batter. Make sure it is mixed well, and then you can fill the baking tray lined with paper cups. Bake for 20 minutes on 180°C.
Cream:
-300 ml whipping cream
-250 g mascarpone
-2tbsp granulated sugar
-vanilla extract
Whisk everything together and pipe on cooled cupcakes. Then sprinkle with cake crumbs. Enjoy and stay sweet!

Moji red velvet mafini! Recept: količina:24 mafinov
-100g masla
-50g olja
-2 žlici kakava v prahu
-2 žlički vaniljevega ekstrakta
-200g sladkorja
-3 jajca
-300g moke
-120 ml mleka
-rdeče barvilo za živila
-1žlica maskarpone
-sol
-žlička kisa
-žlička sode bikarbone
V večji posodi zmešamo skupaj maslo sobne temperature, olje ter sladkor. Z mešalnikom mešamo toliko časa, da masa postane svetle barve, in polna zraka. Nato dodamo jajca. Dodajamo po eno jajce in po vsakem dobro premešamo. V drugi posodi si pripravimo moko ki smo jo presejali ter sol. Zmešamo si še mokre sestavine ki so, mleko, jedilna barva ter kakav v prahu. Barve dodamo po želji, odvisno od intenzivnosti, ki jo želimo doseči. Mokre sestavine dobro premešamo, da nimamo nobenih grudic kakava v prahu.
Izmenjujoče dodajamo suhe in mokre sestavine v prvo posodo. Na koncu dobro premešamo in dodamo mascarpone. Zopet premešamo, da se nam grudice razgradijo. Dodati moramo samo še sodo bikarbono, ki smo jo zmešali skupaj z kisom. Ta se lepo speni in takrat jo dodamo v biskvitno maso. Še enkrat dobro premešamo nato pa maso porazdelimo v pekač obložen s papirčki za mafine.
Pečemo 20 minut, pri 180°C.
Krema:
-300 ml smetane za stepanje
-250g mascarpone
-2 žlici sladkorja
-vaniljin ekstrakt
Vse sestavine položimo v posodo in dobro zmiksamo. Poljubno nabrizgamo na ohlajene mafine in okrasimo z zdrobljenim biskvitom. Uživajte in ostanite sladki!
