Sweet vs Savory
My dear friends Anja and Andrej prepared delicious onion breadsticks/buns for our New Year's Eve party. I loved them, so I had to ask for a recipe. Anja told me how they made them and here is my version. I prepared them in two different styles. One is sweet and one is savory. So I will tell you know how to use the same dough for both.
The dough is simple pizza dough. You can use the recipe you usually use to make homemade pizza. If you wish, you can also use store bought.
Recipe:
-500g flour
-1 pack dried yeast
-200 ml milk
-100 ml water
-salt
-brown sugar
-15g butter
-2tbsp olive oil
First let me say that you may need a bit more flour or water. I usually eyeball everything and add ingredients, if I think something is missing. Ok, one very simple and quick recipe. Put flour in a big bowl, add dried yeast, salt, sugar and mix together. After that, add in water and milk that has been slightly warmed. Use a hand mixer to mix everything together. After a minute add in melted butter and olive oil. Mix the dough for 5 minutes or until it is firm. After 5 minutes, divide dough into two pieces. For the sweet one add a table spoon of brown sugar and mix it in. For the savory one I added some turmeric powder and cayenne pepper. After it is all mixed well form into a ball, cover with a towel and set aside to rest for one hour. Meanwhile you can prepare caramelized onions. For this recipe I used 2 large onions, some sugar and 2tbsp of white wine and oil. Slice onions into small pieces and put on heated oil. Cook them on medium heat for around 30 minutes. If onions start to burn a bit, just add some water. After 30 minutes, add in tsp of sugar and wine. Let it cook for 5 more minutes and they are done.
To make breadsticks I rolled the dough out very thinly in a long rectangle shape. Half of the dough I covered with filling and then I fold the other half over. I then cut out long stripes of dough and turn one end over couple of times. Put breadsticks on baking tray and bake at 220°C for about 15 minutes. If you wish, you can cover them with egg for a little shine or like I did, using heavy cream.

Na novoletni zabavi sem se popolnoma navdušila nad nekakšno mešanico med čebulnimi žemljicami in zavitki. Te zvitke sta pripravila prijatelja Anja in Andrej. Ker mi ni dalo miru, sem malo povprašala o receptu in iz vsega slišanega ustvarila svojo verzijo. Pripravila sem palčke dveh vrst in sicer slane ter sladke. Pripravljene pa so kar iz istega testa, kar je še dodaten plus.
Testo, ki sem ga uporabila je testo, ki ga po navadi uporabljam, ko delam domačo pico. Če imate doma recept, ki je vam najljubši lahko seveda uporabite kar tistega, če pa vam časa za pripravo le tega zmanjka, uporabite kupljenega.
Recept:
-500g moke
-1 zavojček suhega kvasa
-200 ml mleka
-100 ml vode
-sol
-rjav sladkor
-15g masla
-2 žlici olivnega olja
Mogoče boste potrebovali malo več moke ali pa tekočine. Sama nič ne tehtam ampak vse naredim po občutku.
V večjo posodo stresemo moko dodamo sol, sladkor ter zavojček kvasa in premešamo. Nato dodamo rahlo ogreto vodo plus mleko. Z mikserjem mešamo toliko časa, da dobimo srednje zmiksano maso. Nato dodamo olivno olje ter stopljeno maslo. Testo nato mešamo še slabih 5 minut ali dokler ne dobimo testa, ki ga lahko oblikujemo. Sedaj testo ločimo na dva dela. Prvemu delu, ki bo za sladke palčke dodamo žlico rjavega sladkorja in dobro zgnetemo. Drugemu delu, ki ga bomo uporabili za slane palčke dodamo začimbe po vaši izbiri. Sama sem dodala nekaj kurkume ter kajenskega popra. Obe masi dobro pregnetemo in pustimo počivati v posodah nekje na toplem.
Med čakanjem na testo lahko pripravimo karamelizirano čebulo za naše slane palčke. Za to količino sem rabila 2 veliki čebuli, sladkor ter 2 žlici belega vina in olje. Čebulo zrežemo na majhne koščke in pražimo na srednjem ognju, približno 30 minut. Če se nam zdi da se čebula žge lahko vmes dodamo malo vode. Po 30 minutah dodamo žličko sladkorja in zalijemo z vinom. Pustimo da tekočina izpari in čebula je pripravljena.
Za pripravo palčk testo razvaljamo precej tanko, v dolg pravokotnik. Polovico testa premažemo z nutelo ali čebulo, nato pa drugo polovico prepognemo čez. Vse kar nam še ostane je, da z nožem izrečemo tanke trakove testa, ki ga na eni strani držimo, drugi konec pa nekajkrat zavrtimo, položimo na pekač in pečemo 15 minut pri 220°C. Za večji sijaj lahko palčke pred peko premažemo z jajcem ali pa s sladko smetano.
